How To Make Brick-Oven Pizza (Brooklyn Style)

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • 1 cup warm water (110°F/43°C)
  • 2 tablespoons olive oil
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • Toppings of your choice (pepperoni, mushrooms, bell peppers, etc.)
  • Fresh basil leaves, for garnish

Instructions

  1. In a large bowl, combine the flour, yeast, sugar, and salt.

  2. Add the warm water and olive oil to the dry ingredients. Mix until a dough forms.

  3. Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.

  4. Place the dough in a greased bowl and cover with a clean kitchen towel. Allow it to rise for 1-1.5 hours, or until doubled in size.

  5. Preheat your brick oven to the highest temperature possible (around 800°F/426°C). If using a regular oven, preheat to 500°F (260°C) with a pizza stone inside.

  6. Punch down the dough and divide it into 4 equal portions. Shape each portion into a ball and let them rest for 10 minutes.

  7. Roll out each ball of dough into a thin circle.

  8. Transfer the rolled-out dough onto a pizza peel or a baking sheet lined with parchment paper.

  9. Spread a thin layer of pizza sauce onto each pizza dough, leaving a small border around the edges.

  10. Sprinkle shredded mozzarella cheese evenly over the sauce.

  11. Add your desired toppings, such as pepperoni or vegetables.

  12. Slide the pizzas onto the preheated brick oven floor or onto the preheated pizza stone in your regular oven.

  13. Bake for 8-10 minutes in the brick oven (or 12-15 minutes in a regular oven) until the cheese is melted and bubbly, and the crust is golden brown.

  14. Remove the pizzas from the oven and let them cool slightly before slicing.

  15. Garnish with fresh basil leaves before serving.
