How To Make Springtime Pasta

Ingredients

  • 8 ounces of linguine
  • 1 tablespoon of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of asparagus spears, trimmed and cut into 2-inch pieces
  • 1 cup of fresh peas
  • 1/2 cup of vegetable broth
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the cherry tomatoes, asparagus, and peas to the skillet. Cook for 5 minutes until the vegetables are tender.

  4. Pour in the vegetable broth and lemon juice, and season with salt and pepper. Simmer for 2-3 minutes until heated through.

  5. Add the cooked linguine to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until warmed.

  6. Remove from heat and sprinkle with lemon zest and grated Parmesan cheese.

  7. Serve the Springtime Pasta with fresh basil leaves for garnish.
