Ingredients

  • 1 leg of lamb (approx. 2 kg)
  • 4 cloves of garlic, minced
  • 2 sprigs of rosemary, chopped
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.

  3. Rub the mixture all over the leg of lamb, making sure to coat it evenly.

  4. Place the lamb in a roasting pan and roast in the preheated oven for 2 hours or until the internal temperature reaches 145°F for medium-rare.

  5. Remove the lamb from the oven and let it rest for 10-15 minutes before carving.

  6. Serve the Easter roast lamb with your favorite sides.
