Ingredients

  • 8 oz spaghetti
  • 1 cup frozen peas
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. In a pot of boiling water, cook the frozen peas and asparagus for 2-3 minutes until tender. Drain and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

  4. Add the cooked spaghetti, peas, and asparagus to the skillet. Toss to combine.

  5. Drizzle the lemon juice over the pasta and sprinkle with lemon zest. Stir well.

  6. Season with salt and pepper to taste. Sprinkle Parmesan cheese over the pasta.

  7. Serve the pasta warm and garnish with additional lemon zest if desired.
