Ingredients

  • 8 ounces linguine
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup white wine
  • 1 pound littleneck clams, scrubbed
  • 4 cups kale, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes. Sauté for 1 minute until fragrant.

  3. Pour in the white wine and add the clams. Cover and cook for about 5 minutes until the clams open.

  4. Remove any unopened clams from the skillet. Stir in the kale and cherry tomatoes. Cook for 2-3 minutes until the kale wilts.

  5. Add the cooked linguine to the skillet and toss to combine. Cook for an additional 2 minutes to heat through.

  6. Sprinkle with chopped parsley and season with salt and black pepper.

  7. Serve the spicy clam and kale linguine hot, garnished with grated Parmesan cheese.
