Ingredients

  • 1 white cabbage, thinly sliced
  • 1 cup lentils, cooked
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (400g) diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried rosemary
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  3. Add the sliced cabbage to the skillet and cook until slightly wilted, about 5 minutes.

  4. Stir in the cooked lentils, diced tomatoes, tomato paste, and dried herbs. Season with salt and pepper to taste.

  5. Transfer the mixture to a greased baking dish and sprinkle grated Parmesan cheese on top.

  6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.

  8. Serve hot and enjoy!
