How To Make Porcini, Pancetta & Spelt Soup

Serves:

Ingredients

  • 1 cup dried porcini mushrooms
  • 4 slices pancetta, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup spelt, rinsed
  • 6 cups chicken or vegetable broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. In a bowl, pour boiling water over the dried porcini mushrooms and let them soak for 10 minutes. Drain and set aside.

  2. Heat a large pot over medium heat and add the diced pancetta. Cook until crispy, then remove from pot and set aside.

  3. In the same pot, add diced onion, carrots, celery, and minced garlic. Cook until vegetables are softened, about 5 minutes.

  4. Add the rinsed spelt and drained porcini mushrooms to the pot. Stir to combine.

  5. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes until spelt is tender.

  6. Season with salt and pepper to taste.

  7. Serve the soup hot, garnished with fresh parsley and grated Parmesan cheese.
