How To Make Nigella’s Pasta Carbonara Recipe

Classic Italian pasta dish with creamy, salty sauce made from eggs and pancetta.

Ingredients

  • 400g spaghetti
  • 200g pancetta, diced
  • 3 garlic cloves, minced
  • 2 large eggs
  • 100g grated Parmesan cheese
  • 1/2 tsp black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook spaghetti in boiling water according to package instructions until al dente.

  2. While pasta is cooking, sauté pancetta in a pan over medium heat until crisp.

  3. Add garlic to the pan and cook for another minute.

  4. In a bowl, whisk together eggs, Parmesan cheese and black pepper.

  5. Drain spaghetti and reserve 1/2 cup of pasta water.

  6. Add spaghetti and reserved pasta water to the pancetta pan and turn off heat.

  7. Pour the egg mixture over the pasta and stir quickly to combine.

  8. Serve immediately, garnished with parsley if desired.
