This classic Italian pasta dish features spaghetti tossed with a creamy sauce made from eggs, Parmesan cheese, and pancetta.

Ingredients

  • 1 lb spaghetti
  • 4 oz pancetta, diced
  • 3 cloves garlic, minced
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Cook spaghetti according to package directions until al dente. Reserve 1/2 cup of cooking water and drain the pasta.

  2. In a large skillet, cook pancetta over medium heat until crispy. Add garlic and cook until fragrant, about 30 seconds.

  3. In a small bowl, whisk together eggs and Parmesan cheese. Slowly pour egg mixture over the hot pasta, stirring constantly to coat the spaghetti and cook the eggs.

  4. Add reserved pasta water as needed to loosen the sauce. Season with salt and pepper to taste.

  5. Serve immediately, garnished with chopped parsley.
