Ingredients

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, cook the pancetta over medium heat until crispy. Remove from the skillet and set aside.

  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.

  4. In a medium bowl, whisk together the eggs, Parmesan cheese, and black pepper.

  5. Add the cooked spaghetti to the skillet with the garlic and toss to coat.

  6. Remove the skillet from heat and quickly pour in the egg mixture, tossing the spaghetti continuously to prevent the eggs from scrambling.

  7. Add the cooked pancetta and chopped parsley to the skillet and toss until well combined.

  8. Serve hot, garnished with additional Parmesan cheese and parsley.
