How To Make Amatriciana Recipe

Ingredients
- 12 ounces (340g) spaghetti
- 4 ounces (113g) pancetta, diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (14.5 ounces) crushed tomatoes
- 1/4 cup (60ml) red wine
- 1/2 cup (50g) grated pecorino cheese
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

Cook the spaghetti in a large pot of salted boiling water until al dente. Drain and set aside.

In a large skillet, cook the pancetta over medium heat until crispy. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

In the same skillet, add the chopped onion and cook until it becomes translucent. Add the minced garlic and red pepper flakes, and cook for an additional minute.

Pour in the crushed tomatoes and red wine, and bring to a simmer. Cook for about 15 minutes, until the sauce thickens slightly.

Stir in the cooked pancetta and season the sauce with salt and freshly ground black pepper to taste.

Add the cooked spaghetti to the skillet and toss until well coated with the sauce.

Sprinkle the grated pecorino cheese on top and toss again to combine.

Serve hot, garnished with freshly chopped parsley.
