Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 2 cans (6.5 ounces each) chopped clams, drained, juices reserved
  • 1/2 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, cook until garlic is fragrant.

  3. Add white wine and simmer for 2 minutes, allowing the alcohol to cook off.

  4. Stir in the chopped clams and reserved clam juices. Cook for 5 minutes.

  5. Reduce heat to low and stir in heavy cream. Simmer for another 5 minutes, until the sauce thickens.

  6. Season with salt and pepper, to taste.

  7. Add cooked spaghetti to the skillet and toss to coat with the sauce.

  8. Serve hot, garnished with chopped parsley.
