Ingredients

  • 8 ounces of pasta
  • 2 cups of fresh basil leaves
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of pine nuts
  • 2 cloves of garlic
  • 1/2 cup of extra-virgin olive oil
  • Salt to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

  2. In a blender or food processor, combine the basil, Parmesan cheese, pine nuts, garlic, and a pinch of salt. Pulse until finely chopped.

  3. With the blender or processor running, slowly drizzle in the olive oil until the mixture is well blended and smooth.

  4. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and the pesto sauce. Toss until the pasta is well coated.

  5. Cook for an additional 2-3 minutes, stirring occasionally, until heated through.

  6. Serve the pesto pasta garnished with additional grated Parmesan cheese.
