How To Make Roasted Red Pepper & Parsley Pesto with Penne

Ingredients
- 2 red bell peppers, roasted and peeled
- 1 cup fresh parsley leaves
- 2 cloves garlic
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces penne pasta
Instructions

Preheat the oven to 450°F (230°C).

Place the roasted red peppers, parsley, garlic, Parmesan cheese, pine nuts, olive oil, salt, and black pepper in a food processor. Process until smooth.

Cook the penne pasta according to package instructions until al dente. Drain and return to the pot.

Add the roasted red pepper and parsley pesto to the pot with the pasta. Toss to coat evenly.

Serve hot and garnish with additional Parmesan cheese and parsley, if desired.
