Ingredients

  • 12 oz orecchiette pasta
  • 1 can (15 oz) butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 red chili, thinly sliced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the orecchiette pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced chili, and cook for 2 minutes until fragrant.

  3. Add the butter beans to the skillet and cook for another 5 minutes, stirring occasionally.

  4. Stir in the cooked orecchiette pasta, lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste.

  5. Cook for another 2-3 minutes until everything is well combined and heated through.

  6. Serve hot, garnished with grated Parmesan cheese.
