How To Make Orecchiette with Butter Beans, Parsley, Chilli & Lemon

Ingredients
- 12 oz orecchiette pasta
- 1 can (15 oz) butter beans, drained and rinsed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 red chili, thinly sliced
- Zest of 1 lemon
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions

Cook the orecchiette pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced chili, and cook for 2 minutes until fragrant.

Add the butter beans to the skillet and cook for another 5 minutes, stirring occasionally.

Stir in the cooked orecchiette pasta, lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste.

Cook for another 2-3 minutes until everything is well combined and heated through.

Serve hot, garnished with grated Parmesan cheese.
