How To Make No-Tomato Pasta Sauce

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup vegetable broth
  • 1 cup canned pumpkin puree
  • 1/2 cup unsweetened almond milk
  • Salt and pepper, to taste
  • 1/4 cup nutritional yeast (optional)
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.

  2. Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for an additional minute.

  3. Add the vegetable broth, pumpkin puree, almond milk, salt, and pepper to the saucepan. Stir well to combine.

  4. Reduce the heat to low and let the sauce simmer for 10 minutes, stirring occasionally.

  5. If desired, stir in the nutritional yeast for a cheesy flavor.

  6. Remove the sauce from heat and stir in the fresh basil.

  7. Serve the sauce over your favorite pasta and enjoy!
