How To Make Sweet Potato Gnocchi with Tomato Sauce

Ingredients
- 2 large sweet potatoes, cooked and mashed
- 2 cups all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions

In a large mixing bowl, combine the mashed sweet potatoes, flour, Parmesan cheese, salt, and black pepper. Mix until well combined and a dough forms.

Divide the dough into small portions and roll each portion into a log. Cut the log into small bite-sized pieces.

Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant and translucent.

Add the crushed tomatoes, dried basil, dried oregano, salt, and pepper to the skillet. Stir well and simmer for about 10 minutes.

Add the cooked gnocchi to the skillet and toss to coat in the tomato sauce. Cook for an additional 2-3 minutes until heated through.

Serve the sweet potato gnocchi with tomato sauce in bowls, garnished with fresh basil.
