Ingredients

  • 1 pound fusilli pasta
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon zest
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook fusilli pasta according to package instructions until al dente.

  2. Combine olive oil, lemon juice, Parmesan cheese, parsley, and lemon zest in a small bowl.

  3. Drain pasta and transfer it to a large bowl. Pour the dressing over the pasta and mix well.

  4. Season with salt and pepper to taste.

  5. Serve with additional Parmesan cheese and chopped parsley, if desired.
