How To Make Summer Courgette & Tomato Gratin

Ingredients
- 4 medium-sized courgettes, sliced
- 4 large tomatoes, sliced
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 cup of grated Parmesan cheese
- 1/2 cup of breadcrumbs
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large baking dish, arrange a layer of courgette slices followed by a layer of tomato slices. Repeat until all the courgettes and tomatoes are used.

In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes until softened.

Spread the onion and garlic mixture evenly over the courgette and tomato layers in the baking dish.

In a small bowl, combine the grated Parmesan cheese and breadcrumbs. Sprinkle this mixture over the top of the dish.

Season with salt and pepper to taste.

Bake in the preheated oven for 30-35 minutes until the top is golden and bubbling.

Serve hot as a main dish or a side dish to complement your summer meals.
