How To Make Courgette & Ricotta Pasta

Ingredients
- 300g pasta
- 2 courgettes, thinly sliced
- 250g ricotta cheese
- 2 cloves of garlic, minced
- Grated zest of 1 lemon
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a large pan, heat some olive oil over medium heat. Add the courgettes and garlic, and cook until softened.

Stir in the ricotta cheese and lemon zest, and season with salt and pepper.

Add the cooked pasta to the pan and toss well to coat.

Serve the pasta garnished with fresh basil leaves and grated Parmesan cheese.
