How To Make Aubergine Milanese with Spaghetti

Ingredients
- 2 large aubergines
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 8 oz spaghetti
- Marinara sauce, for serving
Instructions

Slice the aubergines into 1/4-inch thick rounds.

In a shallow bowl, whisk the eggs and season with salt and pepper.

In another shallow bowl, mix the breadcrumbs and Parmesan cheese.

Dip each aubergine slice into the beaten eggs, then coat them in the breadcrumb mixture, pressing gently to adhere.

Heat olive oil in a large skillet over medium heat. Cook the breaded aubergine slices in batches for about 3-4 minutes on each side, or until golden brown and crispy. Place the cooked slices on a paper towel-lined plate to remove excess oil.

In the meantime, cook the spaghetti according to package instructions.

Serve the crispy aubergine Milanese over the cooked spaghetti and top with marinara sauce. Enjoy!
