How To Make Pasta Arrabbiata with Aubergine

Ingredients
- 300g pasta
- 1 large aubergine, sliced
- 2 tbsp olive oil
- 3 cloves of garlic, minced
- 1 can (400g) crushed tomatoes
- 1 tsp dried chili flakes
- 1 tsp dried oregano
- Salt, to taste
- Freshly ground black pepper, to taste
- Grated Parmesan cheese, for serving
- Fresh basil leaves, for garnish
Instructions

Cook the pasta according to package instructions until al dente. Drain and set aside.

Heat the olive oil in a large pan over medium heat. Add the aubergine slices and cook until golden brown and tender, about 5-7 minutes per side. Remove from the pan and set aside.

In the same pan, add the minced garlic and cook until fragrant, about 1 minute.

Add the crushed tomatoes, dried chili flakes, dried oregano, salt, and black pepper. Stir well to combine.

Simmer the sauce for 15-20 minutes, allowing the flavors to meld together.

Return the cooked aubergine slices to the pan and cook for an additional 5 minutes.

Add the cooked pasta to the pan and toss well to coat it with the sauce.

Serve the pasta arrabbiata with aubergine hot, garnished with grated Parmesan cheese and fresh basil leaves.
