How To Make Lentil & Tuna Salad

Ingredients
- 1 cup of dried lentils
- 1 can of tuna, drained
- 1/4 cup of red onion, finely chopped
- 1/4 cup of cherry tomatoes, halved
- 1/4 cup of cucumber, diced
- 2 tablespoons of fresh parsley, chopped
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions

Cook the lentils according to package instructions. Drain and set aside to cool.

In a large bowl, combine the cooked lentils, tuna, red onion, cherry tomatoes, cucumber, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the lentil and tuna salad chilled or at room temperature.
