How To Make Aubergine & Chilli Tagliolini

Ingredients
- 250g tagliolini pasta
- 1 large aubergine, diced
- 2 cloves of garlic, minced
- 1 red chili, thinly sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- Salt, to taste
- Parmesan cheese, for garnish
- Fresh basil leaves, for garnish
Instructions

Cook the tagliolini pasta according to package instructions. Drain and set aside.

Heat olive oil in a large pan over medium heat. Add minced garlic and sliced chili. Sauté for 1-2 minutes.

Add diced aubergine to the pan and cook until softened, about 8-10 minutes.

Sprinkle dried oregano and salt over the aubergine. Stir well to combine.

Add the cooked tagliolini pasta to the pan and toss until well coated with the aubergine mixture.

Cook for an additional 2-3 minutes to let the flavors meld together.

Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.
