How To Make Aubergine Couscous Salad

Ingredients
- 1 large aubergine, diced
- 1 cup couscous
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
Instructions

Preheat the oven to 400°F (200°C).

Place the diced aubergine on a baking sheet and drizzle with 1 tablespoon of olive oil. Sprinkle with cumin, paprika, salt, and black pepper. Toss to coat.

Roast in the preheated oven for 20-25 minutes, or until the aubergine is golden and tender.

In a separate saucepan, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.

Fluff the couscous with a fork and transfer it to a large bowl.

Add the roasted aubergine, cherry tomatoes, parsley, mint, lemon juice, and remaining tablespoon of olive oil to the bowl. Toss to combine all the ingredients.
