Ingredients

  • 2 medium courgettes, grated
  • 1/2 tsp salt
  • 2 spring onions, finely chopped
  • 2 tbsp fresh dill, chopped
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil, for frying
  • For the dill & cucumber sauce:
  • 1/2 cup plain Greek yogurt
  • 1/4 cup cucumber, grated
  • 2 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Place the grated courgettes in a colander, sprinkle with salt, and let them sit for 10 minutes to release excess moisture. Squeeze out the liquid using your hands.

  2. In a mixing bowl, combine the grated courgettes, spring onions, chopped dill, flour, baking powder, black pepper, and beaten eggs. Mix until well combined.

  3. Heat the vegetable oil in a large frying pan over medium heat. Drop spoonfuls of the courgette mixture into the hot oil, flattening them slightly with the back of the spoon. Cook for 3-4 minutes per side until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.

  4. Meanwhile, prepare the dill and cucumber sauce by combining the yogurt, grated cucumber, chopped dill, minced garlic, lemon juice, salt, and pepper in a bowl. Mix well.

  5. Serve the courgette fritters warm with the dill and cucumber sauce on the side. Enjoy!
