  • 2 large sweet potatoes, peeled and diced
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 4 large eggs

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add sweet potatoes, red onion, garlic, paprika, and salt. Cook until potatoes are tender, about 10-12 minutes.

  3. Scoop 1/4 cup of sweet potato mixture into greased muffin tin cups, creating a small well in the center of each.

  4. Crack an egg into each well and season with additional salt and pepper.

  5. Bake for 15-18 minutes or until egg whites have set but yolk is still runny.

  6. Carefully remove from muffin tin and serve hot.
