How To Make Whole 30 Sweet Potato Hash Recipe

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 eggs

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add sweet potatoes and cook for 8-10 minutes or until partially cooked.

  3. Add bell pepper, onion, garlic, paprika, thyme, salt and pepper. Stir to combine.

  4. Cover skillet and cook the veggies for an additional 8-10 minutes, stirring occasionally.

  5. Create four wells in the hash and crack one egg into each well.

  6. Cover the skillet again and cook until eggs are cooked to your preferred doneness.

  7. Serve immediately.
