Ingredients

  • 4 slices of bread, preferably stale
  • 2 leeks, sliced
  • 4 tomatoes, sliced
  • 6 eggs
  • 1 cup of milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup of grated cheese
  • fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. Arrange the slices of bread in the dish, overlapping them slightly.

  3. In a skillet, sauté the leeks until softened and slightly caramelized.

  4. Layer the sautéed leeks on top of the bread slices, followed by the tomato slices.

  5. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the mixture over the leek and tomato layers.

  6. Sprinkle the grated cheese on top.

  7. Bake for 30-40 minutes until the eggs are set and the top is golden brown.

  8. Let it cool for a few minutes, then garnish with fresh parsley.

  9. Serve hot and enjoy!
