How To Make Sauerkraut Pierogi

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1 cup sauerkraut, drained and squeezed to remove excess liquid
- 1/2 cup onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Sour cream, for serving
Instructions

In a large bowl, mix flour and salt. Gradually add warm water and knead until smooth dough forms. Cover and let it rest for 30 minutes.

In a medium skillet, melt butter over medium heat. Add onions and cook until softened.

Add sauerkraut to the skillet and cook for 5-7 minutes, until heated through. Season with salt and pepper to taste. Remove from heat and let it cool.

On a floured surface, roll out the dough to 1/8 inch thickness. Cut circles using a round cookie cutter.

Place a spoonful of sauerkraut filling onto each circle. Fold the dough in half and pinch the edges to seal.

Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.

Serve hot with sour cream on the side.
