How To Make Pierogi

Delicious Polish dumplings filled with a variety of savory or sweet fillings, typically served with sour cream.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup warm water
  • 1 tbsp vegetable oil
  • 2 large potatoes, boiled and mashed
  • 1/2 cup finely chopped onion
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, mix together flour and salt. Make a well in the center and pour in warm water and oil. Mix until a soft dough forms.

  2. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.

  3. In a skillet, sauté the chopped onion in butter until translucent. Add the mashed potatoes and season with salt and pepper. Cook for 2-3 minutes, then remove from heat and let cool.

  4. Roll out the dough on a floured surface until thin. Cut out circles using a cookie cutter or a glass. Place a spoonful of the potato filling onto each circle.

  5. Fold the dough over the filling to form a half-moon shape. Press the edges firmly to seal.

  6. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and drain well.

  7. Serve hot with sour cream.
