  • 1 whole chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups chicken broth
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.

  2. In the same pot, add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

  3. Return the chicken to the pot and add the salt, black pepper, thyme, bay leaf, and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour.

  4. While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the milk, stirring until a dough forms.

  5. Drop spoonfuls of the dumpling dough into the simmering chicken broth. Cover and cook for 10 minutes, or until the dumplings are cooked through and fluffy.

  6. Remove the bay leaf and serve the chicken and dumplings hot.
