  • 2 cups dried black-eyed peas, rinsed and sorted

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Place the rinsed black-eyed peas in the slow cooker.

  2. Add the chopped onion, minced garlic, jalapeno pepper, red bell pepper, diced tomatoes, vegetable broth, smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper.

  3. Stir everything together to combine.
