A delicious and hearty stew made with black-eyed peas, onions, peppers, and smoked ham hocks.

Serves:

Ingredients

  • 1 pound dried black-eyed peas, rinsed and drained
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 smoked ham hocks
  • 6 cups water
  • salt and black pepper, to taste

Instructions

  1. In a large pot, combine the black-eyed peas, onion, bell peppers, garlic, ham hocks, and water. Mix well.

  2. Bring the mixture to a boil then reduce the heat to low and simmer for 1 hour.

  3. Add salt and black pepper to taste.

  4. Continue to simmer for an additional 30 minutes or until the peas are tender.

  5. Remove the ham hocks from the pot and shred the meat. Add the meat back to the pot and stir well.

  6. Serve in bowls and enjoy!
