How To Make The Best Baked Rice and Beans Recipe

Ingredients
- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- Salt and pepper, to taste
- 2 cups vegetable broth
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, heat some olive oil over medium heat.

Add the onion, garlic, bell pepper, and jalapeno pepper. Sauté until the vegetables are softened, around 5 minutes.

Add the rice, black beans, cumin, paprika, chili powder, salt, and pepper to the skillet. Stir well to combine.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.

Transfer the mixture to a greased baking dish. Cover tightly with foil.

Bake in the preheated oven for 25-30 minutes, until the rice is tender.

Remove the foil and sprinkle the shredded cheddar cheese over the top. Return to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes before serving.

Garnish with fresh cilantro before serving.
