How To Make Bourbon Street Red Beans and Rice Recipe

Hearty and soulful red beans cooked with smoked sausage, served over rice. A true Cajun classic, straight from Bourbon Street.

Ingredients

  • 1 lb dried red beans, rinsed and soaked overnight
  • 4 cups water
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1 lb smoked sausage, sliced
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Drain soaked beans and transfer to a large pot with 4 cups of water. Bring to a boil over high heat.

  2. Reduce heat to low and add in onion, green bell pepper, celery, garlic, thyme, oregano, and bay leaves. Cover and simmer for 1 hour, stirring occasionally.

  3. Add in sliced smoked sausage and Worcestershire sauce. Simmer for another hour, or until beans are tender and sausage is fully cooked.

  4. Season with salt and pepper to taste. Serve hot over cooked rice.
