Ingredients

  • 4 sausages
  • 2 sweet potatoes, peeled and diced
  • 1 cup sweetcorn kernels
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add sausages and cook until browned. Remove from skillet and set aside.

  3. In the same skillet, add onions, garlic, and bell pepper. Cook until onions are translucent.

  4. Add sweet potatoes, sweetcorn, dried thyme, paprika, salt, and pepper. Stir well to combine.

  5. Transfer the mixture to a baking dish and spread evenly. Place the cooked sausages on top.

  6. Cover the baking dish with foil and bake for 30 minutes.

  7. Remove the foil, sprinkle grated cheese (if using), and bake for an additional 15 minutes or until the sweet potatoes are tender and the cheese is melted and bubbly.

  8. Serve hot and enjoy!
