How To Make Sausage, Gherkin & Pickled Onion Toad-in-the-Hole

Ingredients
- 8 sausages
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- 1 tsp mustard powder
- Salt and pepper, to taste
- 1/4 cup vegetable oil
- 1/2 cup gherkins, sliced
- 1/4 cup pickled onions
Instructions

Preheat the oven to 425°F (220°C).

In a large baking dish, add the sausages and roast in the oven for 15 minutes until browned.

In a mixing bowl, whisk together the flour, eggs, milk, mustard powder, salt, and pepper until smooth.

Carefully remove the sausages from the baking dish and pour the batter into the hot dish. Place the sausages on top of the batter.

Return the dish to the oven and bake for an additional 15-20 minutes until the batter has risen and turned golden brown.

Meanwhile, in a small bowl, mix together the gherkins and pickled onions.

Once the toad-in-the-hole is cooked, remove from the oven and serve hot, topped with the gherkin and pickled onion mixture.
