Ingredients

  • 8 sausages
  • 2 red onions, sliced
  • 2 tbsp olive oil
  • 1 cup all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup milk
  • 2 eggs
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Place the sausages and sliced red onions in a baking dish. Drizzle with olive oil and toss to coat. Roast in the preheated oven for 10 minutes.

  2. In a mixing bowl, whisk together the flour, dried thyme, salt, and black pepper. In a separate bowl, whisk together the milk and eggs. Gradually pour the milk and egg mixture into the dry ingredients, whisking constantly, until a smooth batter is formed.

  3. Remove the baking dish from the oven and carefully pour the batter over the sausages and onions. Return to the oven and bake for an additional 30 minutes, or until the batter is golden brown and cooked through.

  4. Serve the Toad-in-the-Hole with red onions and thyme batter hot, garnished with fresh thyme leaves.
