How To Make Catherine Wheel Toad-in-the-Hole with Honey & Mustard Onions

Ingredients
- 8 pork sausages
- 2 red onions, sliced
- 2 tbsp honey
- 1 tbsp wholegrain mustard
- 200g all-purpose flour
- 2 eggs
- 300ml milk
- salt and pepper to taste
- vegetable oil for greasing
Instructions

Preheat the oven to 200°C (400°F). Place the sausages in a large roasting tin and roast for 10 minutes.

In the meantime, heat a tablespoon of vegetable oil in a pan and add the sliced onions. Cook over medium heat until soft and caramelized, about 10 minutes. Stir in the honey and mustard, and cook for a further 2 minutes.

In a separate bowl, whisk together the flour, eggs, milk, salt, and pepper until smooth.

Remove the sausages from the oven and pour the batter over them. Spoon the honey and mustard onions on top.

Return the tin to the oven and bake for 20 minutes, or until the batter is golden brown and puffed up.
