Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup diced green onions
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish.

  2. In a large bowl, combine the shredded chicken, salsa, cooked rice, sour cream, diced green onions, cumin, garlic powder, paprika, salt, and pepper. Mix well.

  3. Transfer the mixture to the greased baking dish and spread it out evenly.

  4. Sprinkle the shredded cheddar cheese over the top of the casserole.

  5. Cover the dish with foil and bake in the preheated oven for 30 minutes.

  6. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  7. Serve hot and enjoy!
