Ingredients

  • 4 cups of mixed salad greens
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cooked chicken breast, diced
  • 4 slices of bacon, cooked and crumbled
  • 1 avocado, diced
  • 2 hard-boiled eggs, sliced
  • 1/2 cup of crumbled blue cheese
  • 1/4 cup of sliced green onions
  • 1/4 cup of chopped fresh parsley
  • For the dressing:
  • 1/4 cup of olive oil
  • 2 tbsp of red wine vinegar
  • 1 tsp of Dijon mustard
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, chicken, bacon, avocado, eggs, blue cheese, green onions, and parsley.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper until well combined.

  3. Drizzle the dressing over the salad and toss to coat evenly.

  4. Divide the salad into individual serving bowls.

  5. Serve immediately and enjoy!
