How To Make Aubergine, Potato & Goat’s Cheese Gratin

Ingredients
- 2 large aubergines, sliced into rounds
- 4 large potatoes, peeled and thinly sliced
- 200g goat’s cheese, crumbled
- 4 tbsp olive oil
- 2 cloves of garlic, minced
- 1 tbsp dried thyme
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Place the aubergine slices in a colander and sprinkle with salt. Let them sit for 15 minutes to release excess moisture. Rinse and pat dry with a paper towel.

In a large baking dish, drizzle some olive oil and sprinkle minced garlic over the bottom.

Arrange a layer of potato slices on top of the garlic and oil. Season with salt, pepper, and dried thyme.

Place a layer of aubergine on top of the potatoes, followed by a layer of crumbled goat’s cheese.

Repeat the layers until all the ingredients are used, finishing with a layer of goat’s cheese on top.

Drizzle the remaining olive oil over the gratin.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbling.

Let the gratin cool slightly before serving. Enjoy!
