Ingredients

  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup corn kernels
  • 1 cup diced zucchini
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, combine all the vegetables and garlic.

  3. Sprinkle the dried thyme, dried oregano, salt, and pepper over the vegetables.

  4. Pour the vegetable broth over the vegetables and toss to combine.

  5. Cover the baking dish with foil and bake for 30 minutes.

  6. Remove the foil and sprinkle the shredded cheddar cheese over the vegetables.

  7. Return the baking dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  8. Serve hot and enjoy!
