Serves:

Ingredients

  • 1 medium head of cabbage, cored and thinly sliced
  • 2 leeks, white and light green parts only, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.

  2. Add the cabbage and leeks to the pot and cook for 5 minutes, stirring occasionally, until slightly softened.

  3. Pour in the apple cider and vegetable broth. Add the dried thyme and season with salt and pepper. Stir well to combine.

  4. Cover the pot and simmer for 20-25 minutes, until the cabbage is tender.

  5. Serve the hotpot hot and enjoy!
