How To Make Spiced Mushroom & Lentil Hotpot

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 8 ounces mushrooms, sliced
- 1 cup red lentils
- 4 cups vegetable broth
- 1 can diced tomatoes
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

Add the ground cumin, ground coriander, ground turmeric, paprika, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.

Add the sliced mushrooms to the pot and cook for 5 minutes, until they start to soften.

Rinse the red lentils under cold water, then add them to the pot along with the vegetable broth and diced tomatoes. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 30-35 minutes, until the lentils are cooked and tender.

Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
