Ingredients
- 8 oz egg noodles
- 2 cans (5 oz each) tuna, drained
- 1 cup frozen peas
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 1/2 cup diced celery
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup chicken broth
- 1 cup milk
- 1 tsp Dijon mustard
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Bread crumbs for topping (optional)
Instructions

Preheat the oven to 375°F (190°C).

Cook the egg noodles according to package instructions, then drain and set aside.

In a large skillet, melt the butter over medium heat. Add the onion, celery, mushrooms, and garlic. Cook until the vegetables are softened, about 5 minutes.

Stir in the flour and cook for 1 minute.

Gradually whisk in the chicken broth and milk. Bring to a boil and cook until thickened, stirring constantly.

Remove from heat and stir in the Dijon mustard, shredded cheddar cheese, drained tuna, frozen peas, and cooked egg noodles. Season with salt and pepper to taste.

Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle bread crumbs on top if desired.

Bake for 20-25 minutes or until heated through and the top is golden brown.
