Ingredients

  • 1.5 kg turkey crown
  • 200g unsalted butter, softened
  • 4 cloves of garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 150g breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley, chopped dill, salt, and black pepper to make the garlic and herb butter.

  3. Carefully loosen the skin of the turkey crown, taking care not to tear it. Spread the garlic and herb butter evenly under the skin, covering as much of the turkey as possible.

  4. In a shallow dish, spread the breadcrumbs. Dip the turkey crown in the beaten eggs, then coat it in the breadcrumbs, pressing gently to adhere the breadcrumbs to the buttered surface.

  5. Heat vegetable oil in a large frying pan over medium heat. Fry the turkey crown, turning occasionally, until golden brown on all sides.

  6. Transfer the fried turkey crown to a baking dish and place it in the preheated oven. Bake for approximately 1.5 – 2 hours, or until the internal temperature reaches 75°C (165°F).

  7. Remove the turkey crown from the oven and let it rest for 10 minutes before slicing and serving.
