How To Make Turkey Crown with Roast Garlic & Pancetta Stuffing

Ingredients
- 1 Turkey crown (about 3 pounds)
- 6 cloves of garlic
- 4 ounces of pancetta, diced
- 1 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions

Preheat the oven to 350°F (175°C).

Cut a small slit in each garlic clove and roast them in the oven for 15 minutes.

In a pan, cook the pancetta until crispy. Remove from heat and let it cool.

In a bowl, combine the breadcrumbs, Parmesan cheese, parsley, salt, and pepper.

Squeeze the softened garlic cloves out of their skins and add them to the breadcrumb mixture along with the cooked pancetta.

Mix everything together until well combined.

Season the turkey crown with salt and pepper.

Stuff the turkey crown with the breadcrumb mixture, pressing it gently into the cavity.

Place the turkey crown on a roasting tray and drizzle with olive oil.

Roast in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (75°C).

Remove the turkey crown from the oven and let it rest for 15 minutes before carving.

Serve the turkey crown with the roast garlic and pancetta stuffing.
