Ingredients

  • 4 pork escalopes
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup pine nuts, toasted
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Olive oil for frying
  • Lemon wedges, for serving

Instructions

  1. In a shallow dish, combine the breadcrumbs, grated parmesan, toasted pine nuts, lemon zest, salt, and pepper.

  2. Dip each pork escalope into the beaten eggs, allowing any excess to drip off, then coat in the breadcrumb mixture, pressing firmly to adhere.

  3. Heat olive oil in a large frying pan over medium heat. Fry the pork escalopes for 3-4 minutes on each side until golden brown and cooked through.

  4. Serve the lemon, parmesan, and pine nut crumbed pork escalopes with lemon wedges on the side.
